School of pastry & baking arts
This certificate program consists of 26 credit hours and is designed to prepare students for careers in the food service industry. Graduates may be able to find work in institutional, retail, and commercial bakeries as competent bakers and bakers’ helpers. F = Only available in the fall. S = Only available in the spring. U signifies a summer-only course.
Basic quantity baking of breads and pastries is introduced. The fundamentals of baking science, terminology, ingredients, weights and measures, formula conversion, and storage will be taught to students. The importance of sanitation and hygienic work habits that comply with health regulations is stressed.
Continues teaching in the finer arts of bread and pastry preparation, with a focus on pastry arts work, pastries and breads used in high-end restaurants, and ornamental skills for culinary displays.
Description: Discusses the standardized processes involved in the procurement, storage, preparation, holding, and service of safe food and introduces safe food handling practices. Prepares students for the Food Service Sanitation Manager’s Certification test, which is approved by the State of Illinois.
Baking and pastry arts diploma program
The Baking and Pastry Arts Management program at Centennial College will build on basic baking and pastry arts skills to prepare you for a management position in the baking industry. Whether it’s menu planning, buying, planning, or execution, baking management is an important skill to have if you want to turn your passion into a profitable enterprise.
You’ll work in baking and pastry laboratories in the Baking and Pastry Arts Management courses, including Centennial College’s one-of-a-kind commercial bakeshop, as well as an on-campus cafe, restaurant, and event center. You’ll hone your skills in these real-world settings before starting a 14-week work-integrated learning opportunity with one of the College’s industry partners.
Many Baking and Pastry Arts graduates have gone on to work for major hospitality brands in the hotel, resort, and restaurant sectors, as well as large-scale commercial baking businesses.
It’s Your Shift, an innovative industry training and awareness certification, will be part of this program.
As a frontline worker or manager, the certification will equip you with critical expertise and existing resources focused on sexual harassment prevention and safe practices for intervention. It will help you become a leader in the fight against sexual harassment and contribute to the evolution of safe and welcoming work environments as you enter the hospitality industry.
